The Inventor’s Magic: How a “Fried Rice Machine” Saved the Spirit of Saburomaru

The Heart of Craftsmanship: Re:COOPERAGE and the Inventor’s Soul

Deep within the grounds of Saburomaru Distillery lies “Re:COOPERAGE,” a regenerative barrel workshop.

This is not just a repair shop; it is the cornerstone of President Inagaki’s grand vision to build the essential infrastructure for the entire Japanese whisky industry.

A Young Specialist Entrusted from Kagoshima At the center of this workshop is a young cooper in his 20s, a specialist with a decade of experience. He was trained by a legendary master at a shochu maker in Kagoshima.

When his master met President Inagaki and recognized his passion, he insisted on sending his most talented student to Saburomaru.

Seeing this young talent from the far south of Japan dedicate himself to the future of Toyama’s whisky, I felt the weight of “Hitsuzen” (Inevitability). I

t was a destined connection that now protects the quality of every drop produced here.

The Golden “Gama”: A One-Year Search Whisky barrels use no nails or glue.

Instead, a plant called Gama (cattail) is used as a natural sealant. To truly make this a craft of Toyama, the cooper spent a year searching the region for the ideal Gama.

He now harvests, washes, and dries it himself, ensuring that Saburomaru’s barrels are guarded by the blessings of the local land.

“Barrels are Raw Materials” President Inagaki’s philosophy is striking: “Barrels are not just containers; they are raw materials.”

As global demand rises, the quality of barrels worldwide has declined, with leakage rates jumping from 1% to nearly 10%.

To prevent the quality of Japanese whisky from bottoming out, Re:COOPERAGE remains an open workshop, accepting repairs and training young coopers from other distilleries as well.

“Barrel Roll 2”: The Magic Machine To support this mission, President Inagaki utilized his talent as an inventor. Shaving the inside of a barrel was once a grueling, dusty task—limiting a craftsman to only two barrels a day.

To ease this burden, the President designed the “Barrel Roll 2,” an automated shaving machine inspired by washing machines and automatic fried rice cookers.

The result?

Efficiency increased to 16 barrels a day.

This invention is the perfect marriage of a macro vision for the industry and a micro-level empathy for the physical pain of the craftsman.

It is a solution that is both incredibly efficient and deeply kind.

A Beautiful Cycle for the Next 100 Years Even when a barrel reaches the end of its life, the story doesn’t end.

The wood is used as fuel at the distillery’s restaurant, “Kamado Sumi Saburo,” to cook rice. This “beautiful cycle” symbolizes the sustainable 100-year future President Inagaki is striving to protect.

At Bar Little Happiness in Hiroshima, I often say that whisky tastes better when you touch the producer’s soul.
