The Soul of Saburomaru: Meeting the “Edison” of Japanese Whisky

My long-awaited visit to Saburomaru Distillery left me completely captivated.

The experience was so profound that I’ve decided to share it in a five-part series.

For the first installment, I am honored to recount my time with Mr. Takahiko Inagaki, the visionary blender and president who personally guided me through the distillery.

I had met Mr. Inagaki several years ago, but hearing his grand vision now, I felt a deep sense of regret: “Why didn’t I listen more closely to his passion back then?” Today, my respect for him has reached a whole new level.

He is a man who clearly sees a “beautiful future” and possesses the rare ability to turn high ideals into a thriving business.

Under his leadership, the whisky business—once accounting for less than 10% of their sales—now makes up 80%. Seeing the crowds of tourists (nearly 45,000 annually) at 10 AM was a living testament to his success.

A Mission Beyond Self-Interest What moved me most was the “resolve” behind the numbers. He operates under a powerful sense of crisis: “If we only think about our own company, the Japanese whisky industry as a whole will not survive.”

He views the revival of Saburomaru and the development of the entire Japanese whisky ecosystem as a single, inseparable mission.

Despite carrying the immense pressure of a family legacy spanning over 100 years, his eyes sparkled like a young boy’s when he spoke of his crafts. He taught himself CAD to design his own blueprints, leading to the invention of ZEMON (the world’s first cast pod still) and the “Barrel Roll 2” (an automated barrel shaver), both of which have earned numerous patents.

The Loneliness and Passion of an Inventor While the distillery’s exterior is steeped in history, the interior is surprisingly high-tech. In an area like Toyama, where traditional analog culture still remains, his forward-thinking plans must have initially felt isolated.

Reconnecting with his overwhelming energy and hearing the steps he took to achieve “0 to 1” made me realize that our meeting again was a true HITSUZEN—an inevitable encounter that redefined my understanding of passion.

He is, without a doubt, the “Edison of Japanese Whisky.” His dedication is etched into the very architecture of the distillery—from the glass floors revealing the fermentation tanks to the playful, hidden-door-like details. He moves forward silently toward his ideal future, regardless of the challenges or external pressures he might face.

I have become a true fan, not just of the whisky, but of the life and spirit of Takahiko Inagaki. In the next part, I will dive deeper into the story of the revolutionary cast pod still, ZEMON.
