As a bartender who has spent nearly 20 years in this city, I find a beautiful irony in this—a path intended for travel and movement has become a sanctuary for stillness and patience.
Among our collection, the “Togouchi 2020 Heavy Peated” and other local bottlings represent the quiet pride of our region.
When I pour a glass of Togouchi for a guest who has traveled from the other side of the world, I often reflect on the “Hitsuzen” (Inevitability) of that moment.
