White Oak Distillery: Sake Brewers Who Made Whisky

White Oak’s roots are in sake production — the company has been brewing sake since the Meiji era. Whisky production began in 1984, making it one of Japan’s older craft distilleries. The sake heritage influences the fermentation approach: careful yeast management, attention to fermentation time, and a sensitivity to water quality that comes naturally from decades of sake brewing. The result is a whisky with a clean, delicate base that benefits from even short maturation in quality casks.

Coastal Character

Akashi’s coastal location — the Seto Inland Sea is visible from the distillery — contributes a light maritime quality to the whisky: a breath of sea air, subtle brine, alongside the fruit and cereal character of the spirit.
